Instructions

Step 1
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.

2. Prepare the tofu: Crumble the pressed tofu into a large bowl. You want it to resemble a ground meat texture.
Step 3
3. Sauté the aromatics: In a small pan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and cook until softened, about 5 minutes. Allow it to cool slightly.
Step 4
4. Mix ingredients: Add the sautéed garlic and onion to the crumbled tofu. Then, add the breadcrumbs, nutritional yeast (if using), soy sauce, tomato paste, oregano, basil, smoked paprika, salt, and pepper. Mix everything until well combined. The mixture should stick together when pressed. If it’s too dry, add a bit more soy sauce or a teaspoon of water.

5. Form the meatballs: Scoop about a tablespoon of the mixture and roll it into a ball. Place it on the prepared baking sheet. Repeat until all the mixture is used.
Step 6
6. Bake the tofu meatballs: Bake in the preheated oven for 25-30 minutes, turning halfway through, until they are golden and firm.
Step 7
7. Serve: These tofu meatballs are perfect with marinara sauce over pasta, in a sub sandwich, or on their own with a side of veggies.
