Instructions

Step 1
Preheat the oven to 400⁰

Cheese sauce

Place all ingredients in a high-speed blender until smooth and creamy. Set aside.

Dice broccoli and combine with cheese sauce for filling.

Chicken

Slice each chicken breast length-wise so that it folds open. Be careful not to cut all the way through.

Pound out the chicken until evenly thin.

Spread the broccoli cashew mix on one side of the chicken and fold. Secure with toothpick.

Chicken coating

Step 7
Mix all dry ingredients in a bowl.
Step 8
Whisk your eggs in a bowl.
Step 9
Coat your chicken in a thin layer of tapioca flour, then egg, then your dry coating.
Step 10
Place in a greased baking dish and bake for 25-30 minutes or until cooked through.
