Step 1
Season and Roast squash at 180 degrees for twenty minutes - for the last ten add in the garlic and sage leaf
Step 2
Caremlise one diced onion in butter
Cook pasta
Blend sauce in blender and loosen with a bit of greek yoghurt and 3 scoops pasta water
Drain pasta, mix together and serve with burrata
