Instructions

Step 1
1. Cook the Rice:

In a medium saucepan, bring the chicken broth (or water) to a boil.

Add the rice, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed.

Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.

2. Prepare the Sausage and Vegetables:

In a large skillet, heat the olive oil over medium heat.

Add the chopped onion, garlic, and bell pepper. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes.

Add the sliced turkey sausage to the skillet and cook until browned, about 5-7 minutes.

3. Combine the Beans and Tomatoes:

Add the drained and rinsed white beans and the can of diced tomatoes to the skillet.

Stir in the smoked paprika and dried thyme. Season with salt and pepper to taste.

Simmer the mixture for about 10-15 minutes, allowing the flavors to meld together.

Spoon the cooked rice into bowls.
