Instructions
Step 1
Season salmon, sprinkle with paprika and drizzle with olive oil.
Step 2
Cook on both sides until golden but not cooked through, remove and set aside.
Step 3
Add in shallot and cook for 3-4 mins over low heat, mix through garlic and ginger for 1-2 mins. Add in pepper and cook for 3-5 mins. Mix in curry paste for 1-2 mins.
Step 4
Pour in coconut milk, season and add salmon back in, cover and cook for 8-10 mins over low heat. Add in Pok Choi & spinach for remaining 5-7 mins until salmon is cooked through.
Step 5
Pour in fish sauce, soy sauce and lime.
Step 6
Serve with spring onion and coriander 🌿
