Tomato Basil Salmon Pasta

Instructions

Step 1
Cut salmon into cube bite size pieces, about 1in x 1in.
Step 2
Place into a bowl with drizzle of oil and all the seasonings including the lemon pepper, mix well until salmon bites are fully coated.
Step 3
Add salmon to a skillet for 5-6 minutes until fully cooked, then transfer to the side.
Step 4
While salmon cooks, prepare pasta of choice according to package directions. Drain and set aside. Add a few drops of oil OR about a table spoon of pasta water as needed if pasta begins to stick during the next steps.
Step 5
In the same skillet, melt butter and cook garlic until aromatic, about 30 seconds to a minute.
Step 6
Add tomato paste and cook down, add heavy cream, mix until fully incorporated.
Step 7
Add all of the same seasonings from salmon bites besides the lemon pepper into your cream mixture. Stir occasionally. When it begins to simmer, add Parmesan and mix until fully melted.
Step 8
Once Parmesan is melted and everything is fully incorporated, add fresh basil, then add back your cooked Salmon bites and cooked pasta.
Step 9
Stir until pasta and salmon are evenly coated. Optionally, top with a little more fresh grated Parmesan, plate and serve.
