Instructions

Step 1
Heat olive oil in a pan over medium-high heat. Add chicken and cook for 5-8 minutes or until cooked through.
Step 2
Whisk together the dressing ingredients.
Step 3
Add cooked chicken to a large bowl and add sugar snap peas, red capsicum, cherry tomatoes, spring onion, coriander and sesame seeds.
Step 4
Pour dressing over the salad.
Step 5
Divide into two serves and store leftovers in the fridge.
