Step 1
Cut the peppers, tomatos, garlic, and 1 onion into big chunks and lay them out evenly on a baking rack. Drizzle with olive oil and sprinkle some salt and herbs. Bake at 200°C for 30-40 minutes.

Step 2
Cut 2 Onions into rings and fry them in oil until golden. Add some tomato paste and let it sizzle at low/medium heat for 10 minutes.

Blend the baked vegetables in a food processer until smooth. Add vegetable stock if needed.

Add the blended vegetables to the pan with the fried onions and let it simmer for 15 minutes. Add washed rice, some salt, vegetable stock and all the spices. Cook the rice for about 20 minutes. Stirr occasionally.
