Almost a potjie, but it's cooked on the stove, not on coals.
It's made the potjie way.

Add oil to pot and heat it

Chop 1× Whole onion

Add chopped onion to pot on a medium high heat and let it brown a bit. Stirring occasionally for 5 minutes.
Deglase the pot with a splash of water and reduce heat to low.
Cover the pot with lid for 2 min.
Remove lid and let the water reduce.

Chop mushrooms, not too fine. Just a rough chop.

Remove onions from pot.

Add mushrooms to pot on a medium-high heat. Add salt and brown for 1minute.

Add butter to pot and cover the pot, reduce heat to low. Cook for 5 minutes

Remove mushrooms and the water it made, add to the onion bowl.

Turn the stove on high and add the short rib to brown. Cook till brown, then turnover and repeat on other side. Don't forget to season.

Mix half Brown onion soup, half oxtail soup in a cup, add hot water and mix it all together(add water till the cup is ¾ full).

Add the onions/mushroom mix to the pot and give everything a mix

Add the corn, baby corn, and sugarsnap Peas to the pot

Pour the soup mixture into the pot and bring to a simmer. Then reduce heat to low. Allow to slowly cook for 1hour.
Step 14
Check on pot every 15 minutes and make sure it has enough liquid(about ¼ full) if not, add water.
