Swahili Chicken and Rice
😮💨🔥 This grilled chicken and turmeric rice is so good!
For the chicken:
500 gms chicken thigh with bone or mixed
1 1/2 tbsp tamarind paste
1 1/2 tsp ground cinnamon
1 tsp turmeric
1 tsp Spanish paprika or chilli powder
1-2 tsp garlic paste
1-2 tsp grated ginger
1 tsp salt
1 tsp chilli flakes
1 tsp curry powder
1 tbsp tomato paste
1/2 tsp citric acid or squeeze of 1 lemon
1/2 cup coconut milk (add more if you want extra sauce)
1/4 cup mint laban (or greek yoghurt
1 tsp chopped mint (optional)
The rice:
3 cups
Rice;Washed and soaked
1 tbsp olive oil
1 tbsp butter
1 small onion, diced
1 tsp turmeric powder
2 chicken stock cubes
1/4 cup frozen peas
