Instructions

Step 1
Preheat oven to 180 fanforced
Step 2
Put satay paste ingredients in a bowl with 1/4 cup of coconut milk. Mix to combine. Add chicken and turn to coat
Step 3
Place remaining coconut milk and all satay sauce ingredients in an ovenproof casserole dish. Whisk to combine. Place chicken in sauce skin side up arranging pieces so they are not touching each other. Scrape all satay paste out of bowl and dab onto chicken skin
Step 4
Bake for 30 mins. Remove from oven and baste sauce over chicken. Bake for a further 15 mins. Baste sauce over chicken. Bake for another 5 mins
Step 5
If sauce is too thin, take chicken out of dish and put sauce back in oven for 5-10 mins to thicken
