Instructions

Step 1
Preheat oven to 400 F. Coat two large baking sheets with non stick cooking spray.
Step 2
In a small bowl, whisk together the oil and vinegar. Set aside.
Step 3
Place two pieces of fish on each baking sheet
Step 4
In a large bowl, combine the beans and tomatoes. Pour in the oil and vinegar, and toss gently to coat. Pour half of the green bean mixture over the fish on one baking sheet and the remaining half over the fish on the other. Turn the fish over, and rub it in the oil mixture to coat. Spread the vegetables evenly on the baking sheets so hot air can circulate around them.
Step 5
Bake for 5 to 8 minutes until the fish is just opaque. The fish is done and ready to serve when it just begins to separate into flakes when pressed gently with a fork
