Tuna Cakes
I can’t even count the number of times I’ve just grabbed tuna straight out of the can when I’m in a rush, but these tuna cakes are a game-changer! I love them chilled, but you can enjoy them any way you prefer. 🫶🏼
Here’s how you do it:
4 cans of tuna, drained really well
1 celery stick, finely chopped
1/2 small red pepper, diced
1 small red onion, finely chopped
Any fresh herbs you love—dill works wonders!
1 tablespoon of Dijon mustard
1/4 cup almond flour
2-3 eggs (add a third if you need more binding)
Mix everything together, shape into patties, and bake at 375°F for 20 minutes.
Let them cool so they hold their shape. These are great as a burger, a tuna melt, or just on their own with a squeeze of lemon!
**Pro tip: If your patties aren’t holding together, just throw in another egg.**
Make sure your tuna is super well-drained before you start.
