Instructions
Step 1
Slice the peppers into circles about 3/4 inch thick
Step 2
Mix all the remaining ingredients except for the cheese together in a bowl
Step 3
Place parchment paper on a baking sheet and lay peppers out on the paper
Step 4
Fill each pepper ring with the filling and press gently
Step 5
Top each pepper ring with some shredded cheese
Step 6
Bake until set (temperature and time are not specified, probably 350F for 10 minutes?)
Step 7
Remove from oven once the filling is set and let cool on the baking sheet
