Preheat a BBQ grill plate to high
Step 2
To make the grilled Capsicum Rice, heat the oil in a large nonstick pan over high heat. Add the paprika, cumin, garlic paste and tomatoes and cook, stirring occasionally, for 10 minutes or until thickened and deep red in colour. Add the broccoli and cauliflower rice and cook, tossing until heated through.
Step 3
While the rice mixture is cooking, add the red and green capsicum and onion to the BBQ plate and cook for 10 minutes or until charred and tender.
