Instructions
Step 1
In a large pan heat olive oil over a medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon. Remove excess fat if necessary.
Step 2
Add chopped onion and minced garlic to the pan and cook until onion is clear (about 3-4 mins).
Step 3
Pour in the broth and tomatoes and bring to simmer.
Step 4
Stir in cream, Parmesan and Italian seasoning. Simmer for 10 mins, stirring occasionally.
Step 5
Add baby spinach and cook until wilted, about 2 mins.
Step 6
Season with salt and pepper to taste
