Instructions

Prepare Ingredients:

Remove stems from jalapeños and chop roughly.

Peel and chop the cucumber.

Zest and juice the lemon.

Set aside the basil leaves and garlic.

Combine in Jar:

Place the chopped jalapeños, basil leaves, lemon zest, lemon juice, cucumber, garlic, and salt in the jar.

Add Water:

Pour enough filtered water into the jar to submerge the ingredients by about 2 cm.

Ensure all ingredients remain under the brine to prevent spoilage. Seal the jar with an airlock or a loose lid.

Fermentation Period:

Store the jar in a cool, dark place at 18-22°C for 5-7 days.

Check daily to release gas buildup if you’re not using an airlock. Ensure ingredients remain submerged in the brine.

Blend the Sauce:

After 5-7 days, taste to ensure it has a tangy, herbal flavor with a hint of lemon.

Blend the mixture until smooth, adding a little more lemon juice or water if it’s too thick.

Bottle and Store:

Transfer the sauce to a clean bottle or jar, seal, and refrigerate. It will keep for several months in the fridge, with flavors intensifying over time.
