Step 1
Crush oreos until finely ground (you may leave the filling in with this)

Wrap the bottom of the pan in tin foil.

Add the sugar and mix well

Add melted butter and mix well
Step 5
Press into a spring form cheese cake pan. Thin it out acrossed the bottom and edges and or sides. Make sure the edges are not too thick.

Bring all ingredients to a room temperature.

Mix cream cheese well to remove any chunks. (This will be easier the warmer the cream cheese is).

Add sugar and mix well.
Step 9
Add corn starch and mix well.
Step 10
Slowly add eggs until just combined on low speed.
Step 11
In a separate bowl combine instant coffee, vanilla, and heavy cream and let sit.

After 1 mn you may add the mixture to the cream cheese.

Ensure this is mixed well.

Add chocolate chips

Preheat oven to 325 f degrees

Poor mixture over crust. Be sure to avoid scraping any "chunks" from the edges.

Sprinkle the top with extra chocolate chips.

Place in over and bake for 50 mn to 60 mn (often I go a bit longer than that).
Step 19
Take any left overs and place them in a mini dish so as not to waste any yummy. Add that dish into the over for your "taste test" later.

Place in the fridge to cool.
Step 21
If possible keep in the fridge overnight.
