1 tspturmeric powder

Marinade
Step 1
Wash and pat dry 5-6 chicken drumsticks. Make deep gashes on them.

In a bowl, mix 2 tbsp curd, 1 tbsp ginger-garlic paste, 1 tsp green chilies, 1 tsp dried fenugreek leaves, 1 tsp ghee, 1 tsp turmeric powder, 2 tsp red chili powder, 1 tbsp coriander powder, and salt to taste.

Coat the chicken thoroughly with this marinade. Cover and let rest for at least 30 minutes.

In a dry pan, toast 2 black cardamom pods, 2 green cardamom pods, 2 tbsp coriander seeds, 2 tbsp black peppercorns, 4-5 cloves, 2 tbsp cumin seeds, 2 tsp fenugreek seeds, and 2 tsp mustard seeds until fragrant.

Grind the toasted spices into a fine powder using a blender or mortar and pestle. Set aside.

Heat 2-3 tbsp oil in a large skillet over medium heat.

Place the marinated chicken drumsticks in the pan and grill them until golden brown on all sides. Remove from the pan and set aside.

In the same pan, add 2 tbsp ghee, 2 bay leaves, and 2 whole green chilies. Sauté for a few seconds.

Add ½ cup chopped onions and cook until golden brown. Add 2 tbsp water to deglaze the pan.

Stir in ½ cup chopped tomatoes and cook until they soften and the oil begins to separate.

Add 1-2 tbsp of the prepared spice mix, 1 tsp black pepper powder, and salt to taste. Mix well.

Pour in ½ cup water and bring the mixture to a simmer.

Return the grilled chicken drumsticks to the pan and coat them with the gravy.

Cover the pan and let it simmer on low heat for 10-15 minutes, or until the chicken is tender and the gravy thickens to your desired consistency.
