Chicken Tikka Sandwich with Mint Raita

This was so good! Mint raita can be replaced with mayonnaise. For the salad you can keep it simple, just add it plain. But mint raita takes it to the next level. Enjoy!

Instructions

Step 1
Cut chicken into cubes. Marinade the chicken using ingredients listed
Step 2
Set aside for minimum two hours or overnight
Step 3
Make the mint raita, combine all ingredients and add milk little bit at a time until you get the desired consistency

For the salad and roughly slice up the veg, add the dried mint leaves and olive oil, and combine

Next heat a pan and add the oil

Once oil it hot add the chicken and cook on both sides for around 7-8 mins in total, should brown on both sides. Cook on medium low heat

Slice up your baguette or loaf. I'm using Asda handcrafted olive ciabatta loaf

On one side add the chicken and cheese slice on top, broil or put in oven until cheese has melted

Then on other side add the lettuce, salad and mint raita

Slice up and enjoy!
