Bbq chicken pizza with sweet potato crust

Ingredients

1 poundsweet potato
orange-fleshed, peeled and
½ cupalmond flour
finely ground almonds, plus 2
¼ cupgluten-free flour

¼ cuplow-sodium barbecue sauce
1 cuppart-skim mozzarella
grated
1 cupboneless skinless chicken breast
cooked and
¼ cupred onions
very thinly sliced
0.5red bell pepper

Instructions
Step 1
. Preheat oven to 400°F (200°C). Line a baking

sheet with parchment paper and set aside. Place

the sweet potatoes in a steamer basket set in

a large pot filled with a few inches of water.

Bring to a boil, cover, and steam until the sweet

potatoes are very tender when pierced with a

fork, 8-10 minutes. Alternatively, microwave in a

bowl with 1/4 cup water, covered, until tender, 5

minutes. Drain. Transfer to a large bowl and mash

until completely smooth. Set aside and let cool to

room temperature.

2. Add the almond flour, gluten-free flour, eggs

and salt, and stir to combine. Place the mixture
