Biscotti are Italian cookies that are baked twice and traditionally dipped in either coffee, tea, or hot chocolate. This is a small batch of homemade that's free of gluten and refined sugar, and baked in your air fryer, so they're nice and crunchy

Step 1
Preheat your air fryer to 360F, and cut a piece of parchment paper that will fit inside

In a large bowl, combine together the dry ingredients - oat flour, almond meal, cornstarch, baking powder, and salt

Almond meal is ground whole almonds, as opposed to almond flour, which is ground blanched almonds. If you don't have almond meal, then blend some whole almonds in a food processor until fine

For chocolate biscotti, replace 2 tbsp (10 g) of oat flour with cocoa powder, or maybe stir in some chocolate chips instead of almonds

In a separate bowl, beat together the wet ingredients - egg, sweetener, and vanilla

Combine together, and mix until just combined. Fold in roughly chopped nuts

Transfer to a piece of parchment paper, and form into a rectangle

Air fry at 360F for 12 minutes. Remove from the air fryer, and let cool on a wire rack for 15 minutes. Lower the air fryer temperature to 300F
Step 9
After cooling, slice into your biscotti. Air fry at 300F for 10 minutes, flipping halfway through. Transfer to a wire rack to cool completely
