Instructions

Step 1
Preheat oven to 400° F
Step 2
Slice vegetables into 1 inch cubes
Step 3
Boil potatoes for 5-10 mins until soft when poked by a fork
Step 4
Toss vegetables in oil
Step 5
To a paper bag or other container, add flour, S&P, and any seasonings (paprika, cumin, curry powder, dill, garlic or onion powder, etc)
Step 6
Mix the seasoning and flour well
Step 7
Drop the oiled potatoes and other vegetables into a bag, not all at once or the sides will stick together & not get coated.
Step 8
Shake the bag well. Ensure the pieces are evenly coated with flour
Step 9
Oil a baking tray (with or without tin foil) and spread the veggies out in one layer
Step 10
Optional: put small slices of butter around the tray, about a quarter of a tablespoon each, so the butter melts while cooking
Step 11
Bake 25-30 mins or until golden brown.
