Lemon Garlic Potatoes

2 lbrusset potatoes
1 washed, cut into 1 inch thick wedges

3 Tbspextra-virgin olive oil

2garlic cloves
large, finely minced using a garlic crusher or knife

1 tspkosher salt

¼ tspblack pepper

1 ½ tspdried oregano

3 Tbsplemon juice

Instructions
Step 1
Preheat the oven to 400°F.
Step 2
Bake potatoes-Toss all the lemon garlic potato ingredients in a 13 x 9 inch roasting pan. Bake for 40 minutes.
Step 3
Wrap pork-Sprinkle the pork with the salt and pepper. Wrap each pork tenderloin in a slice of prosciutto, finishing with the seam-side down. Leave on a work surface while the potatoes are in the oven to bring it slightly to room temperature.
Step 4
Roast pork-Remove the pan from the oven. Place the pork on top of the potato, seam-side down, and surround with the cherry tomatoes. Drizzle everything with the 1 tablespoon of extra-virgin olive oil. Bake for 25-30 minutes or until the center of the pork registers 140°F, for medium, measured using a cooking thermometer.*
Step 5
Rest and serve-Rest for 5 minutes, then serve, being sure to use all the pan juices as the sauce!
