Step 1
1. Dice one carrot and one potato into small cubes. 2. Pour 1 liter of water over the chicken in a pot, bring to a boil, and simmer for 2 minutes. 3. Drain the broth, rinse the chicken, and pour in 2.5 liters of clean water. Bring to a boil, skim off the foam, add a peeled onion and one whole carrot, cover with a lid, and simmer for 30 minutes on low heat. 4. In a heated skillet, sauté the diced carrot in butter for 5 minutes over medium heat. 5. Remove the cooked chicken, onion, and carrot from the pot and place them in a bowl. Separate the meat from the bones and cut it into small pieces. 6. Add the diced potato, salt, black pepper, and sautéed carrot to the broth, stir, and cook for 15 minutes on low heat under a lid. 7. Add the chicken meat and vermicelli to the pot, bring to a boil, and cook for 3 minutes on low heat. 8. Serve the chicken soup with vermicelli hot, garnished with fresh dill or herbs.
