Instructions

Step 1
Fry a leek or onion or fennel until its soft (you can also do onion and leek/fennel or add celery)
Step 2
Add a bag of cherry tomatoes and about 4 cloves of finely diced garlic and chilli flakes and fry on gentle heat until the tomatoes start to pop (you might need to squish them after about 8 mins with the back of a wooden spoon)
Step 3
Add about 1l of veg or fish or chicken stock, dried herbs de provence, big white beans from a can or chickpeas, and salt and pepper
Step 4
Bubble for as long as you like, at least 15 mins
Step 5
Squish the white beans a little bit with a wooden spoon
Step 6
Then add the uncooked gnocchi and stir it in making sure there is enough liquid to cover it all
Step 7
Immediately put the white fish on top (could be any white fish, thin fillet is best so it cooks quickly eg sea bass) and put the lid on the casserole dish so it steams while the gnocchi cooks
Step 8
After about 4 mins test the gnocchi and the fish to check they're cooked (gnocchi you can taste it or cut it open and chdck it's not floury in the middle anymore, fish it should start to flake rather than be slimy)
Step 9
If they're cooked take the fish off and set aside for a minute while you stir a good handful of Parmesan into the soup (if you have a spare rind you can also leave it to bubble in the soup)
Step 10
Serve the stew making sure you have a bit of all the components and then put the fish fillet on top
Step 11
Optional: squeeze a lemon over the top and add curly parsley to top
