Instructions
Step 1
Preheat the oven to 325°F (165°C). Line a 9x9-inch baking dish with parchment paper.
Step 2
Mix the graham cracker crumbs, sugar, and melted butter in a bowl until combined. Press this mixture into the bottom of the prepared pan to form the crust.
Step 3
In a large bowl, beat together the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
Step 4
Stir in the sour cream and melted white chocolate until fully incorporated.
Step 5
Pour the cheesecake filling over the crust.
Step 6
Dot the raspberry jam on top of the cheesecake filling and swirl it gently with a knife or skewer.
Step 7
Bake for 30-35 minutes, or until the center is set and a toothpick comes out clean.
Step 8
Let cool, then refrigerate for at least 4 hours before cutting into bars.
