PO Put the kettle on to boil,
Pour the chicken stock into a saucepan and heat until
simmering. While the stock is coming to the boil, drop in
the bruised lemongrass stalk, star anise and ginger.
When the liquid has come to the boil, drop in the turkey
meatballs and let them simmer for about 3 minutes,
skimming any froth that appears on the surface.,
After 3 minutes, add the midget trees and pak choy and
simmer for a further minute, Remove the noodles from the packet and drop them into a
colander. Pour over the water that has boiled in the kettle-
this is both to warm the noodles but also to rinse off the
weird oil they are coated in - and then shake to cool a litle
Carefully pick up the noodles and plop them into the base
of a soup bowl. Check the meatballs are cooked through by cutting into
one to make sure there are no raw pink bits left. When
you are happy they are done, take the pan from the heat
and stir through the fish sauce and lime Juice. Pour the hot
mixture carefully over the noodles.
Dress the steaming bowl of yumminess with the red chilli
spring onion, mint and coriander.
