Instructions
Step 1
Combine diced chicken in a bowl with 1 tbsp each of garlic powder, onion powder, paprika, Cajun seasoning, olive oil & 1 tsp of rosemary, 1/2 tsp of salt.
Step 2
Heat a little olive oil in a large pan. Add the chicken & cook for about 15 minutes, until no pink & fully cooked.
Step 3
When chicken is done, remove from pan & place in a bowl for later. Add the diced peppers & onions to the same pan. Cook for about 5-10 minutes, until soft. While the veggies are cooking, cook the pasta according to package instructions.
Step 4
When veggies are cooked, add the tomato paste and give a good stir. Then add the half & half & stir again.
Step 5
Add 1/2 tbsp each of garlic powder, onion powder, paprika, Cajun seasoning & 1/2 tsp of salt to the veggies. Let the sauce thicken for a couple minutes then add the Parmesan cheese. Stir until completely combined.
Step 6
Add the spinach to the pan. When wilted, add the chicken back in & the cooked pasta. Stir to fully combine & serve
