Instructions

Step 1
1. Prepare the beans - Rinse the dried Black beans under cold water, then soak overnight. OR quick method - bring beans and water for 2 minutes, then remove from heat and let sit for 1 hour. Drain and beans before using.
Step 2
2. Saute vegetables - put olive oils in frying pan, saute onion, garlic, carrots, celery until soft - 5-7 minutes.
Step 3
3. Put beans and broth in slow cooker with spices. Add sautéed vegetables.
Step 4
4. Bring to boil, then reduce heat to low. Simmer 2-3 hours.
Step 5
Serve over white rice.
