Mukimo is made using green maize (corn), potatoes and pumpkin leaves or spinach. Sometimes legumes such as beans or green peas are also used. These ingredients are mashed to form a firm 'mashy' dish. Originally the dish was made with using starchy bananas or yams in place of potatoes before the latter became widely available in Kenya during the colonial era.
