Instructions

Step 1
Prepare the couscous by placing it in a large bowl and pouring on 200ml boiling water. Stir with a fork then cover and leave for 5-6 minutes.
Step 2
Juice the lemon.
Step 3
Chop the coriander and mix it into the couscous along with the lemon juice.
Step 4
Drain the chickpeas and add to the couscous.
Step 5
Drizzle olive oil over the couscous and mix all of the ingredients until well combined.
