Step 1
Preheat oven to 400F
Step 2
Cook jumbo shells in boiling water for 9 minutes. Drain and cool on a sheet pan. Set aside
Step 3
Mix together Ricotta, mascarpone, half the Parmesan, half the mozzarella, parsley, salt & pepper. Fill the shells
Step 4
Grease a 9" by 13" baking dish; add half the sauce
Step 5
Arrange the shells (opening up), cover with the remaining sauce, Mozzarella, and Parmesan
Step 6
Bake covered at 400F for 30 minutes.
