Ingredients
4 servings

2 tablespoonsolive oil

4skinless boneless chicken breast halves
cut into bite-sized pieces

2cloves garlic
finely chopped

1tart red apple
like Cortland or Empire, quartered, cored, coarsely chopped

1sweet onion
large, coarsely chopped

1green bell pepper
large, seeded, deribbed, coarsely chopped

1zucchini
coarsely chopped

4plum tomatoes
Roma, quartered lengthwise

2 tspcurry powder

½ tspfresh ginger
peeled and finely chopped

salt

fresh ground pepper
Instructions
Step 1
In a 4-qt (4-1) heavy-bottomed stew pot over medium heat, warm the olive oil. Add the chicken pieces and sauté, stirring until lightly browned, 8 -10 minutes.
Step 2
Using a slotted spoon, transfer the chicken to a bowl.
Step 3
Add the garlic, apple and onion to the same pot over medium heat and sarté, stirring, until the onion is translucent, about 5 minutes.
Step 4
Return chicken to the pot.
Step 5
Add the bell pepper, tomatoes, curry powder and ginger. Bring to a simmer.
Step 6
Reduce heat to medium-low, cover and simmer gently for 10 minutes, to blend and develop the flavors. Season to taste with salt and pepper.
Step 7
Spoon into warmed shallow bowls and serve.
