1 x 15 ozcan chickpeas
rinsed and drained

1cucumber
diced

1red onion
thinly sliced

1 cupcherry tomatoes
halved

½ cupkalamata olives
pitted and halved

½ cupfeta cheese crumbled

¼ cupfresh parsley
chopped

2 tablespoonsextra virgin olive oil

1 tablespoonred wine vinegar

salt
to taste

pepper
to taste

1 cupgreek yogurt

1cucumber
grated and squeezed to remove excess water

2cloves garlic
minced

1 tablespoondill
chopped

2 tablespoonslemon juice

salt
to taste

Instructions
Step 1
In a large mixing bowl, combine chickpeas, diced cucumber, sliced red onion, cherry tomatoes, Kalamata olives, crumbled feta cheese, and chopped parsley.
Step 2
In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour this dressing over the salad and toss to coat evenly.
Step 3
For the Tzatziki dressing, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper in a bowl. Mix well until smooth.
Step 4
Serve the salad with a generous dollop of Tzatziki dressing on top or on the side.
