Ingredients

Meat Sauce
2 tablespoonsextra-virgin olive oil
1 poundhot italian sausage
1 poundground beef
6 clovesgarlic
crushed and chopped
1 cuponion
chopped
3 tablespoonstomato paste
1 cupdry red wine
use something you’d enjoy drinking
½ cupbeef stock
2 x 28 ouncecans crushed tomatoes
1 tablespoonbrown sugar
1 tablespoondried basil
3 tspdried parsley
2 tspdried oregano
1 tspkosher salt
¼ tspground black pepper
Cheese Layer
Instructions
Meat Sause
Step 1
Place a large saucepan or pot over medium high heat. Add in the sausage and beef and use a wooden spoon to break the meat up into pieces. Continue cooking until meat is browned and no pink remains, about 10 minutes.
Step 2
Remove all meat to food processor. Remove all grease but a couple tablespoons
Step 3
Add in the onion and continue cooking, stirring occasionally, for 6 to 8 minutes, or until onion has softened and is almost translucent.
Step 4
Add garlic and cook for 1 minute, or until fragrant. Stir in the tomato paste.
Step 5
Add Meat back to pan
Step 6
Add in the wine and stir to combine. Cook for 5 minutes. Then stir in the stock and crushed tomatoes, stirring well to combine. Bring sauce to a boil, then reduce to medium low and continue cooking for at least 40 minutes.
Step 7
Stir in the sugar, basil, parsley, and oregano. Cook for another 5 minutes. Taste and add salt and pepper as needed.
Step 8
Remove from heat allow to slightly cool before using it in the lasagna
For Cheese Layer
Step 9
Shred mozzarella cheese and set aside until needed. Grate the parmesan cheese and set aside until needed.
Step 10
In Food Processor combine the Cottage Cheese, Parmesan and/or Fontina, egg, egg yolk, Italian seasoning, Salt, Pepper and Nutmeg. Process until well combined (almost creamy). Set aside until needed.
Lasagna Noodles
Step 11
Preheat oven to 375 degrees (F). Lightly grease a 9×13-inch casserole dish.
Step 12
Place a long sheet of parchment paper (about 24″) on you countertop.
Step 13
Bring a large pot of water to a rolling boil. Add a pinch of salt, then add in the lasagna noodles. Cook for 4 minutes, then run cold water into pan while pouring most hot water out. Should be cool enough to place noodles side by side on the prepared parchment paper.
Assembly
Step 14
Pour 1 cup of meat sauce on the bottom of the casserole dish. Then layer 4 noodles on top of the sauce. Top with 1/3 of the cheese filling, 1 and 1/2 cups of the sauce, and 1/4 cup of the Parmesan cheese. Repeat 2 more times.
Step 15
On the top layer, add the remaining sauce and mozzarella cheese.
Step 16
Cover with aluminum foil and bake for 30 minutes. Remove foil and continue baking to 15 to 20 minutes, or until cheese is melted and bubbling.
Step 17
Remove from oven and let the lasagna rest for at least 15 minutes before slicing.
