Remove the tail, head and any remaining skin

Instructions
Step 1
Rinse dried prawns briefly to remove impurities, then drain and set aside. Lightly toast the prawns in a dry pan over low heat until aromatic, then remove and set aside. Heat coconut oil in the same pan, add cumin seeds, and let them splutter. Sauté chopped garlic until golden brown, then add sliced onions and green chillies, cooking until the onions are translucent and slightly golden. Stir in kokum rinds, red chilli powder, turmeric powder, and salt, cooking for 1-2 minutes. Add toasted prawns and mix well to coat with spices, cooking for 3-4 minutes. Reduce heat, add grated coconut and sugar, and mix thoroughly, cooking for another 2 minutes. Garnish with fresh coriander leaves and serve.
