Instructions
Step 1
Heat olive oil, garlic, onion, and carrot in a large skillet. Simmer until onions are translucent.
Step 2
Add tomatoes, olives, capers, and spices and simmer on low for 10 or so minute while prepping the zucchini.
Step 3
Ribbon peel or spiralize the zucchini into noodles.
Step 4
Add zucchini into pan with the basil and Parmesan, and toss until noodle are softened and the sauce is well incorporated.
Step 5
Serve immediately with a garnish of Parmesan.
