This healthier Elote mexican street corn dip is my current hyperfixation 🌽🫶🏻 it’s so fresh and makes the perfect snack or summer side dish

Instructions
Step 1
Add corn to pan and cook for 5 minutes over high heat until lightly charred.
Step 2
Mix the mayo, Greek yoghurt, lime juice, parmesan, paprika and garlic together in a bowl.
Step 3
Add the corn to the bowl while it’s hot and mix well (the heat will melt the cheese).
Step 4
Add cucumber, herbs, onion and jalapenos. Mix well and season with salt & pepper to taste.
Step 5
Crumble over the feta and serve as a dip/salsa with corn chips or as a side salad.
