Step 1
Preheat oven to 450. Add water and salt to a pot and boil for pasta.
Step 2
Dice onion, slice mushrooms, and minced garlic.

Step 3
In a large sauce pan, on medium heat, brown the sausage.

Add onions and garlic. Cook until fragrant.

Step 5
Add mushrooms. Cook until soft.

Add tomato sauce and mushroom gravy. Heat to a soft boil.

Step 7
Reduce to simmer and add Parmesan cheese. Note: Use the pre-grated cheese from the deli section of the grocery store. Other types of grated Parmesan will not melt properly.

Step 8
Add pasta to boiling water. Cook for 8 minutes. You want it to be just before al dente.

Step 9
Add heavy cream and Add seasoning. Season to taste. I am equally heavy handed on the oregano, basil, and Italian seasoning.

Step 10
Add cooked pasta to an oven safe, deep, baking dish. Add cooked sauce on top of pasta and mix together. Cover the dish in foil and place in the oven, middle rack, for 10 minutes.
Step 11
Remove foil from dish. Place havarti slices on top and bake for 10 minutes. You want to cover as much of the top as possible.
