High Protein Chili with Brown Rice

Instructions

Step 1
Cook the Rice: Rinse the brown rice in a fine-mesh sieve. In a medium saucepan, combine the rice and water or stock. Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes, or until all the liquid is absorbed. Fluff with a fork.
Step 2
Cook the Chili: In a large pot or Dutch oven, brown the beef mince over medium-high heat. Drain off any excess fat.
Step 3
Add the onion and capsicum (if using) to the pot and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
Step 4
Stir in the crushed tomatoes, kidney beans, black beans, pinto beans, corn, chili powder, cumin, oregano, cayenne pepper (if using), salt, and pepper.
Step 5
Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, for the flavours to meld. Stir occasionally.
Step 6
Serve the chili hot over cooked brown rice
