Instructions

Will's Butter Chicken (serves 8)

Cut 4 lbs boneless skinless chicken thighs into bitesize pieces.

Add ¼ cup Plain Whole Milk Yogurt

1 tsp cayenne pepper

1 tsp cumin

1 tsp chilli powder

1 tsp ground coriander

1 tsp fennel seed

3 Tbsp garam masala

2 Tbsp curry

2 Tbsp minced ginger

Mix by hand and then put in fridge to marinate at least 30 minutes.

Put enough ghee in fry pan and brown marinated chicken over medium high heat.

Set aside.

Roughly chop 12 roma tomatoes and two white onions. Add more ghee to the same fry pan and cook onions with the following spices until onions are translucent.

1 handful raws cashews

Add 2 Tbsp minced ginger, 2 Tbsp minced garlic, chopped tomatoes, and 1 can tomato sauce. Simmer until the tomatoes are soft. Blend this mixture in blender.
Step 28
Return chicken to pan and added the blended tomato/onion mixture. Add a little heavy cream to mellow. Simmer 20-30 minutes covered. Cook rice with juice form ½ a lime and cilantro to taste.

Heat oven to 400 to cook naan according to directions.
