Ingredients
4 servings
800gcauliflower
1 cupcottage cheese
2 Tbspgreek yoghurt
1 Tbsplemon juice
1 tspturmeric
1 tspcumin
1 tspsmoked paprika
¼ tspchili powder
2garlic gloves
salt
pepper
Yoghurt dip
Instructions
Step 1
Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
Step 2
Blend the cottage cheese (or egg whites), yogurt, lemon juice, olive oil, and all the spices into a smooth marinade
Step 3
Toss the cauliflower florets thoroughly in the marinade.
Step 4
Place the cauliflower and protein on the tray, ensuring even spacing.
Step 5
Roast for 25-30 minutes or until the cauliflower is golden brown and tender.
Prepare the Yogurt Dip
Step 6
Mix all dip ingredients together in a bowl and refrigerate until ready to serve.
