Step 1
Set a large pot of salted water to boil
Step 2
Mix light soy sauce, rice vinegar, sesame oil, grated garlic, sesame paste, sugar and chili oil (if want spicy). Whisk together and let sit.
Step 3
Chop cucumber into matchsticks. Then boil noodles. Preserve noodle water!
Step 4
Move noodles to a large bowl. Add soup water to sauce bowl. Whisk together. Should be thick enough to coat back of spoon and stay on.
Step 5
Drizzle sauce over noodles. Mix it up. Add sesame seeds. Then add cucumbers. Serve.
