Ingredients
4 servings
300gbrown rice noodles
soaked according to packet, drained then tossed with 1 tsp sesame oil so they don’t stick
120gunsweetened peanut butter
smooth
1 Tbspfish sauce
1 Tbsplight soy sauce
or dark
2 Tbspsesame oil
2 tsplight brown sugar
or palm, or maple syrup
1 Tbspsweet chilli sauce
plus more, if you like, to taste at the table
0.5juice of lime
1cucumber
sliced thinly into half-moons
0.5 bunchspring onions
trimmed and thinly sliced
coriander
small, roughly chopped
roasted salted peanuts
lightly crushed
0.5lime
cut into wedges
Chilli sauce
i oil, or sweet chilli sauce, to taste
Instructions
Step 1
In a mixing bowl, whisk just enough warm water into the peanut butter to make a thick sauce with the consistency of double cream, then stir in the remaining sauce ingredients. Taste, adjusting with more of any of the ingredients to your preference.
Step 2
Add the prepared noodles, adding a touch of cold water if necessary, to loosen the noodles and prevent them from clumping too tightly.
Step 3
Divide the noodles into serving bowls, topping each with the sliced cucumber, spring onions and coriander before scattering with the peanuts.
Step 4
Serve with lime for squeezing and hot sauce.
