Step 1
Mix dry ingredients. Add shortening and, using hands, crumble until it resembles course meal. Add water and with hands, mix until it all comes together and doesn’t stick to sides of bowl. Return to bowl and cover with damp towel. Let sit for at least 30 minutes. Remove from bowl and separate into approximately 12 pieces, depending on how large you want your tortillas to be. (I usually separate into about 8 pieces for larger tortillas.)
Roll out with a rolling pin and fry over medium high heat until starting to brown. (Only do one at a time and keep the others covered with damp towel. I roll one as the one before is frying.)
