Instructions
Step 1
Sauté the garlic until just barely getting a hint of brown. Then add in the kimchi, scallions, zucchini and cook until softened. You can add the water at this stage if you’d like.
Step 2
Once the soup base is close to being done cooking, add in the noodles if using and cook directly in the soup. Once noodles are one min or so done from cooking, add in the tofu and egg and cook until heated through.
Step 3
If serving with rice, cook it separately.
