Instructions
Step 1
Heat over to 375f
Step 2
In one bowl, mix dry ingredients (flour, baking soda, baking powder, salt, cinnamon, oats)
Step 3
In another bowl, mash up the bananas then mix well with oil, vanilla, egg, and maple syrup
Step 4
Add dry ingredients to the wet ingredients, mix well, add in the cooked quinoa, mix well.
Step 5
Pour into 12 muffin tins. Add toppings of choice (1/2 cup Choco chips, or frozen blueberries, or chopped up dried apricots, etc)
Step 6
Bake for 25 mins or until lightly browned.
