Delicious Banana and Chocolate Chip muffins made using FREEE Self Raising Flour. As an alternative to the coconut oil used in the recipe, butter or a dairy alternative can also be used. Perfect as a weekend treat!

Step 1
Pre-heat the oven; 180°C, Fan 160°C, 350°F, Gas 4

Line your muffin tin
Step 3
Peel and mash the bananas.
Step 4
Put the butter / oil and sugar into a mixing bowl and beat together.
Step 5
Add the mashed banana and beat again.
Step 6
Break the eggs into the bowl, one at a time, ensuring each is well incorporated before adding the next.
Step 7
Sieve the flour into the bowl and stir the mixture.
Step 8
Stir in the chocolate chips.
Step 9
Spoon the mixture into the prepared muffin tray
Step 10
Bake for 20-25 minutes, until the muffins spring back when touched.
Step 11
Leave the muffins to cool in the tray.
