Step 1
Cook pasta as directed
Step 2
Fry mushroom in olive or avocado oil. As they dry, add onion. Cook, stirring often, until onion are transparent, a few minutes. Add seasoning.
Step 3
When noodles are done, drain, add to baking dish. Mix in cottage cheese. Mix in mushroom mixture and minced garlic. Add sauce and half the mozzarella cheese. Bake for 20 minutes.
Step 4
Pull out of oven and add mozzarella on top. Return to oven for another 10 minutes or until bubbly and cheese is melted.
